Curator's Notes
It's amazing what a bit of time can do! In this unique natural process, farmers store the coffee cherries in airtight, temperature-stable clay pots for 100 hours. Afterward, the coffee is bursting with notes of stone fruit and creamy black tea.
Roaster's Notes
This Natural from Rwanda is really special! An anaerobic fermentation process that keeps the cherries in clay pots for a 100 hour fermentation leads to flavors of Apricot , Strawberry, and Black tea. This is a limited offering with only 125 pounds available! unique processing method called Intango Natural (where they keep the cherries in Clay pots for about 100 hours during the fermentation). The Clay pots help to keep a stable environment as they do not absorb heat.
