Named in honor of the ancient civilization that blossomed for 500 years, Wari brings the magic and history of Peru to your cup. Lift your spirits and your morning with notes of chocolate and hazelnut so sweet you could spread it on toast.

Roaster's Notes

This coffee comes from independent smallholder farmers in the region of Cusco in southern Peru. In honor of this region's ancient past, we are calling this project Espíritu Wari. The Wari is one of the most important prehistoric civilizations in Peru predating the Incan civilization by at least 400 years. They lived in the mountainous valley of the Ayacucho in the center of the country, a sacred location surrounded by history, magic, ancient cultural artifacts, and breathtaking views. They are the first community known to have implemented terraces for agricultural purposes, and this practice still exists today in the work of the coffee producers who are growing this coffee. Their ancient capital city of Wari is now a massive structure of ruins located high in the Andes mountains. In 2017, archaeologists discovered the ruins of a huge Wari temple in the district of Vilcabamba in la Convención de Cusco. Today, among the ruins in these highlands lives the group of small-scale coffee farmers we are working with to produce a different kind of magic. Please enjoy this beautiful expression of Peruvian coffee knowing it was grown on soil enriched with centuries of history, ancient wisdom, and the Espíritu Wari.

"We have had an espresso subscription for 18 months, most coffees I have enjoyed, but this is the first time I have left a review or considered ordering more of a particular coffee. I will leave the flavor profiles to others. What might be helpful to know is that we brew using a Gaggia Babila, almost always pouring a lungo. Typically I will fuss with the grind setting a bit, adjust the flow rate and temp once or twice per bag, but I am by no means adjusting shot after shot...I guess what I mean is that I am casual. And this coffee shined from the first brew. We both consider it a favorite, and as I mentioned, this is the first coffee out of roughly 36 that we have reviewed. Not certain if others will consider this an indictment of the coffee, but for casual espresso drinkers using one-button machines, this coffee is a stand-out for me."
